Chorizo Fried Rice Recipe

Chorizo Fried Rice is one of my favorite go-to easy to make recipes when I'm over at B's apartment. It only requires a few ingredients, doesn't take a lot of effort, and is so delicious! I wouldn't call it "healthy" but is a great snack, side dish, or meal in itself.




Here's the recipe created by me:

Ingredients:
2 cups uncooked rice, cooked in a rice cooker or however you'd like (it works best if the rice has been cooled or refrigerated overnight because you don't want it too sticky. Short or medium grain rice is best.)
1/2 package of pork chorizo (I get the really cheap stuff that's in a tube. You can find it in most grocery stores. It falls apart into a mess when cooking, but for this dish that's exactly what you want)
3 eggs
3-4 Tbsp. soy sauce
1-2 Tbsp sesame oil
1 Tbsp Sriracha sauce
1 tsp hot chili oil (optional)
2-3 dashes Worcestershire sauce
1/4 tsp garlic powder
1 Tbsp Canola oil

Directions:
1. Cook the rice, if you haven't already done so. Mix the soy sauce, sesame oil, Sriracha, chili oil (optional), Worcestershire, and garlic powder together in a small bowl.

2. Add the Canola oil to a wok or your pan that gets the hottest over medium high heat. Once the oil is hot, add the chorizo and cook until it starts falling apart.

3. Add the rice to the pan and stir together until the chorizo is thoroughly mixed in. Pour in the sauce mixture and mix together.

4. Move the rice to the sides of the pan, so that there is a well in the middle. Crack the eggs into the middle of the pan, and let cook for a minute or so.

5. Stir the eggs in and let cook until the rice gets a little crispy on the bottom. Stir and keep cooking until most of the rice is a little crispy, a few minutes or so. Serve and enjoy!
