Happy St. Patrick's Day to all of you! I have a delicious and green-inspired treat to share with all of you today! This was a last minute dessert I made that I didn't even have the proper ingredients for, so I improvised. I don't know why I felt the need to be so festive, I'm not Irish (as far as I know) and generally I don't care for mint chocolate anything! But this was delicious and I highly recommend trying it for St. Patrick's Day dessert!

Ingredients:
2-2 1/2 cups of vanilla ice cream
1 cup of milk
1/3 cup of Mint M&M's (I imagine these are in the candy aisle of the grocery store. I honestly have no idea because this was my improvisation. We had no mint extract so I found these that we've had in the house all the time for the past few months. I'm not the one purchasing them, so who knows where they came from! Alternate improvisation: Mint Oreos instead...yum!)
2 drops green food coloring (I have some super saturated food coloring, you may need more if you have the regular stuff)
Whipped cream, for serving (optional)
Green sprinkles, for serving (optional)
Directions:
1. Put the ice cream, milk, and M&M's in a blender. Blend it all up until it's smooth and completely incorporated. Don't worry, the M&M's will sound awful and terrible blending, but it's fine, they taste delicious in the end product.
2. Pour into glasses, and top with whipped cream and green sprinkles if you have them!
